Responsibilities for this position include:

  • Communicate effectively with patients, visitors, team members and subordinates
  • Ensure patient confidentiality; follow HIPAA guidelines
  • Observe compliance to established standards of practice; JCAHO, OSHA, State/Federal/County guidelines
  • Follow AVI approved standardized recipes and hold production team members accountable to following the standard
  • Understand basic principles of therapeutic diets and/or acknowledges location of resources available when clarification of diet is needed
  • Adhere to all policies and procedures set forth by organization
  • Help with ordering food, kitchen supplies and equipment in accordance with company vendor policies
  • Conduct regular physical inventory of food and non-food items; maintain appropriate inventory as necessary
  • Ensure that all menu items are ready for tray/line assembly in a timely manner
  • Handle any food preparation issues (i.e. food shortages, excesses, outdated products, poor quality) by taking action to correct problems
  • Supervise assembly of food on patient meal trays for regular and therapeutic diets
  • Demonstrate understanding of, practices and holds production team members accountable to proper portion control methods and techniques
  • Is knowledgeable of latest HACCP guidelines;  ensures that high standards of sanitation and personal cleanliness are maintained throughout the kitchen areas at all times; abides by the “Clean As You Go” protocol    
  • Ensure all food items are stored, labeled, dated and rotated (FIFO) in compliance with HACCP guidelines
  • Is knowledgeable of different uses for cleaning chemicals; guides production team members on how to use the proper chemicals to clean and sanitize cooking equipment
  • Attend and assist in conducting regular in-services to increase team members knowledge regarding physical and food safety, sanitation, and accident prevention principles
  • Readily take on additional tasks/duties as assigned

 

Job Requirements

  • Minimum education includes a High School Diploma or equivalent with ability to read, write, speak and comprehend the English language
  • Ability to verbalize directions clearly and accurately
  • Ability to perform mathematics as they relate to the quantifying of recipes and production
  • A minimum of 5 years cooking experience of quantity food production and experience directly related to the duties specified in the healthcare or retail environment is required
  • Culinary certification preferred
  • Must possess strong follow up skills
  • Must utilize great critical thinking skills in day to day operation
  • A passion towards safety and sanitation in all he or she does
  • Strong level of accountability to themselves as well as others
  • The ability to follow and give written and verbal instructions
  • Must have a basic understanding of diet principles; and must extensively understand food preparation and cooking methods
  • The ability to comprehend and guide others in understanding guest service principles as they relate to food production and the flow of the foodservice operation
  • Ability to supervise and train team members, to include organizing, prioritizing and scheduling work assignments is required
  • Professional appearance must be maintained at all times
