Job Description

  • Follow AVI approved standardized recipes 
  • Oversee all production of food 
  • Adhere to all policies and procedures set forth by organization
  • Hire, orient and train production team members 
  • Create and manage production team members schedule
  • Order food, kitchen supplies and equipment 
  • Conduct regular physical inventory of food and non-food items
  • Establish controls to minimize food and supply waste and theft
  • Project annual food and labor costs and monitor actual financial results
  • Plan and supervise special events
  • Demonstrate how different cooking equipment such as ovens, grills, kettles and steamers are used to ensure food quality and presentation; advise production staff on various cooking procedures
  • Handle any food preparation issues (i.e. food shortages, excesses, outdated products, poor quality) by taking action to correct problems


Job Requirements

  • 5+ years of cooking experience in quantity food production 
  • Culinary certification preferred
  • The ability to perform mathematics as they relate to the quantifying of recipes and production
  • Strong follow-up and great critical thinking skills in day-to-day operation
  • A passion towards safety and sanitation
  • Ability to supervise and train associates, to include organizing, prioritizing and scheduling work assignments
