Job Description

AVI Foodsystems is seeking an energetic and skilled culinarian and operator to join our retail management team at the Hospital of the University of Pennsylvania, located in University City, Philadelphia, PA.

  • Follow AVI approved standardized recipes and hold team members accountable to following the standards and proper portion control methods and techniques
  • Oversee production of food in the account, primarily focusing on retail operations
  • Serve as operational lead and support for the retail locations
  • Provide leadership to retail management team 
  • Manage and support catering functions of the department
  • Adhere to all policies and procedures set forth by organization
  • Hire, orient and train production team members to ensure that the highest standards of quality and service are met
  • Create and manage schedules for management team and hourly team members
  • Manage team member time and schedules in timekeeping system (ADP) in accordance to company policies
  • Order food, kitchen supplies and equipment in accordance with company vendor policies
  • Conduct regular physical inventory of food and non-food items; maintain appropriate inventory as necessary
  • Establish controls to minimize food and supply waste and theft
  • Prepare necessary data for the budget in area of responsibility; project annual food and labor costs and monitor actual financial results; take corrective action where necessary to help ensure that financial goals are met
  • Plan and supervise special events to engage customers and drive sales
  • Demonstrate how different cooking equipment such as ovens, grills, kettles and steamers are used to ensure food quality and presentation; advise production staff on various cooking procedures
  • Handle any food preparation issues (i.e. food shortages, excesses, outdated products, poor quality) by taking action to correct problems
  • Readily take on additional tasks/duties as assigned

 

Job Requirements

  • Comprehensive knowledge and application of nutrition services
  • General knowledge of nutrient analysis required
  • Minimum education includes a High School Diploma or equivalent with ability to read, write, speak and comprehend the English language
  • Ability to verbalize directions clearly and accurately; ability to perform mathematics as they relate to the quantifying of recipes and production
  • A minimum of 5 years cooking experience of quantity food production and experience related to the duties specified in the retail environment is required; culinary certification preferred
  • Preferred experience in contract food service retail operations preferred
  • Strong follow-up and great critical thinking skills in day-to-day operation
  • A passion towards safety and sanitation
  • Strong level of accountability to themselves as well as others
  • Ability to follow and give written and verbal instructions; must have a basic understanding of diet principles
  • Ability to comprehend and guide others in understanding guest service principles as they relate to food production and the flow of the foodservice operation
  • Ability to manage and train team members, to include organizing, prioritizing and scheduling work assignments is required
  • Professional appearance must be maintained at all times
